i love sprouts

Sprout Salad

fresh sprouts, a little dressing, your favourite salad fixings/toppings
I have been growing and eating sprouts for a few months. It's easy and inexpensive, and they are a healthy addition to salads and sandwiches. I also eat them by themselves. Because they are on the counter, and I will eat anything left out on the counter. Better than chips, right? 
1  place a layer of sprouting seeds in a wide glass jar, cover with water, leave 2-6 hours
2  stretch mesh over mouth of jar, secure with elastic band. pour out water
3  rinse seeds twice a day by filling with water, swishing and pouring water out
4  keep jar facing down on an angle. ready in about 3 days.

you say potato...

Baked Potato
one potato, baked in microwave, then sliced almost through
edamame beans, shelled
grated or slivered carrot
cheese, crumbled
1 tablespoon salsa
oregano or whatever else is growing
place the carrots and edamames between the slices, top with cheese.
broil until it's melted and browned to your liking.
top with salsa and herbs.
