spinach salad

Spinach Salad (423 calories)
1 cup spinach
1 hard boiled egg
1 TBSP peppercorn ranch dressing
20 g sun dried tomato
1 TBSP grated cheese
1/3 cup toasted almonds
lightly toss the ingredients. next time I will use fresh grated parmesan cheese, just 1 TBSP of almonds and a fresh tomato.

tortilla chips with pineapple and tomato

Tortilla Chips with Pineapple and Tomato (301 cal)
10 tortilla chips 
1/2 cup pineapple
handful of mini tomatos, chopped onion
1 cm slice mozzerella cheese, diced
2 TBSP sour cream, light
 cal 2 TBSP salsa
layer pineapple, tomatos, onion and cubed or grated or cubed cheese
over the tortilla chips, broil until browned.
 add a dollop of salsa and sour cream.


100 cal 10 tortilla chips
38 cal 1/2 cup pineapple
26 calhandful of mini tomatos, chopped onion
90 cal 1 cm slice mozzerella cheese, diced
35 cal 2 TBSP sour cream, light

cabbage salad

Cabbage Salad (424 calories)
1 cup cabbage
1/8 cup raisins
1/8 cup almonds
1/2 cup grated carrots
1/2 TBSP Udo's Omega 3 Oil
3 tortilla chips
1/2 avocado 
slice up the cabbage, toss with grated carrots, raisins and toasted almonds. drizzle oil seasoned with cinnamon and vanilla over mixture. devide avocado quarter into three, place on tortilla chips and place on top of the salad

Fruit Salad, Spagetti Squash with Vegetarian Chicken

Yellow Soup with cloves (90 calories)
Fruit Salad (290 calories)
for the fruit salad, place 1/2 cup blueberries,
 1 sliced banana and 3 tsp vanilla into non stick saucepan. heat up a little,
 cover and turn off heat.
 let it sit for about 5 minutes, then place into a bowl
and drizzle with 1 TBSP chocolate sauce.


Spagetti Squash with Vegetable "Chicken" (195 calories) 
1/2 spagetti squash
1/4 cup tomato sauce
1 vegetable "chicken" patty
boil spagetti squash, scrape out strands with a fork, place on plate.
layer on heated tomato sauce, and then sliced vegetarian pattie.
 top with oregano

Bok Choy Zuchinni Stir Fry

Bok Choy Zuchinni Stir Fry (245 calories)
 cal 1 tsp canola oil
cal 3 stalks bok choy
 cal one zuchinni
 1/6 cup sliced almonds
1 TBSP parmesan cheese
heat pan, pour in the oil.
 stir fry sliced bok choy, zuchinni and almonds until the vegetables are
somewhat tender and browned in places. 
sprinkle on the parmesan and some oregano

rice paper rolls, soup and salad

Rice Paper Rolls (208 calories)
3 pieces rice paper
3 TBSP dumpling filling (see dumplings for recipe)
1/2 cup grated carrots
1/2 cup slivered celery
soak rice paper in warm water to soften, place filler inside and fold then roll up.
a perfect take along lunch.

Soup and a Salad (302 calories)
this is a store bought soup and the salad is just lettuce, carrots and half a hard boiled egg.

we had lots of high calorie food at our dinner table (a birthday party) and I was tempted but it really helped to fill my plate with the meal I had chosen before sitting down. nobody even seemed to notice...

Salad Rolls

Salad Rolls (253 calories) 
  4 pieces rice paper
cal 1/2 cup lettuce
 cal 1/4 cup slivered celery
 cal 1/4 cup cabbage
 cal 1/4 cup shredded carrots
 cal 1/8 cup toasted almonds
 cal 1/8 cup raisins
soak rice paper in hot water for 5-10 seconds, until it is soft.
place on clean dish towel, put ingredients in the center. fold one side over, then the ends,
and then roll it up. I love these,
especially the sweetness of the raisins.

Dumplings, Taco Salad

Taco Salad (388 calories)
1 cup lettuce
1 tomato
1 veggie "meatball"
2 TBSP salsa
6 tortilla chips
2 TBSP light sour cream
1 cm slice part skim mozza cheese
crunch up the chips, layer on heated up crumbled up vegetarian meatball, grated cheese, lettuce, tomato pieces.
toss with salsa and sour cream. 

Dumplings (235 calories)
3 TBSP filling
3 dumpling wrappers
2 tsp oil for frying

place a TBSP of filling on each dumpling. moisten the edges and fold together. steam. fry in small amount of oil if you'd like them to be browned. Serve on sliced cabbage with carrot slivers for garnish.

Filling Recipe
I baked this as 3 loaves, but the texture is better for filling savoury crepes,
 wonton wrappers or rice paper.

veggie bake, zuchinni boats

ZUCHINNI BOATS (175 cal)
one zuchinni
1/4 cup sticky rice
2 tbsp salsa
1 cm slice cheddar
boil one zuchini until almost tender. cut in half, scoop out insides.
mix rice and salsa and scooped out zuchinni. fry in non stick pan.
place rice mixture in zuchinni boats, top with slice cheese and a few chives, maybe oregeno.
brown under broiler.


VEGGIE BAKE (360 cal)
2 medium eggs
1 cup mixed frozen veggies
1 cm slice cheddar
3 tbsp bread crumbs
beat eggs, mix with frozen veggies.
pour into non stick loaf pan, top with cheese, herbs and bread crumbs.
cook 45 min or so, around 350 degrees
(double it for leftovers the next day)


Zuchinni Boats
30 cal one zuchinni
40 cal 1/4 cup sticky rice
15 cal 2 tbsp salsa
90 cal 1 cm slice cheddar

Veggie Bake
130 cal 2 medium eggs
