i love sprouts

Sprout Salad

fresh sprouts, a little dressing, your favourite salad fixings/toppings
I have been growing and eating sprouts for a few months. It's easy and inexpensive, and they are a healthy addition to salads and sandwiches. I also eat them by themselves. Because they are on the counter, and I will eat anything left out on the counter. Better than chips, right? 
1  place a layer of sprouting seeds in a wide glass jar, cover with water, leave 2-6 hours
2  stretch mesh over mouth of jar, secure with elastic band. pour out water
3  rinse seeds twice a day by filling with water, swishing and pouring water out
4  keep jar facing down on an angle. ready in about 3 days.

you say potato...

Baked Potato
one potato, baked in microwave, then sliced almost through
edamame beans, shelled
grated or slivered carrot
cheese, crumbled
1 tablespoon salsa
oregano or whatever else is growing
place the carrots and edamames between the slices, top with cheese.
broil until it's melted and browned to your liking.
top with salsa and herbs.

spinach salad

Spinach Salad (423 calories)
1 cup spinach
1 hard boiled egg
1 TBSP peppercorn ranch dressing
20 g sun dried tomato
1 TBSP grated cheese
1/3 cup toasted almonds
lightly toss the ingredients. next time I will use fresh grated parmesan cheese, just 1 TBSP of almonds and a fresh tomato.


7 cal 1 cup spinach
66 cal 1 egg
60 cal 1 TBSP peppercorn ranch dressing
60 cal 20 g sun dried tomatos
40 cal 1 TBSP grated cheese
190 cal  1/3 cup toasted almonds

tortilla chips with pineapple and tomato

Tortilla Chips with Pineapple and Tomato (301 cal)
10 tortilla chips 
1/2 cup pineapple
handful of mini tomatos, chopped onion
1 cm slice mozzerella cheese, diced
2 TBSP sour cream, light
 cal 2 TBSP salsa
layer pineapple, tomatos, onion and cubed or grated or cubed cheese
over the tortilla chips, broil until browned.
 add a dollop of salsa and sour cream.


100 cal 10 tortilla chips
38 cal 1/2 cup pineapple
26 calhandful of mini tomatos, chopped onion
90 cal 1 cm slice mozzerella cheese, diced
35 cal 2 TBSP sour cream, light
12 cal 2 TBSP salsa

This is as simple as it looks. The "meatballs" come in a package.

30 cal 1 cup spagetti squash
120 cal 6 non meat meatballs
30 cal 2 TBSP tomato sauce
90 cal 1 cm slice cheese

cabbage salad

Cabbage Salad (424 calories)
1 cup cabbage
1/8 cup raisins
1/8 cup almonds
1/2 cup grated carrots
1/2 TBSP Udo's Omega 3 Oil
3 tortilla chips
1/2 avocado 
slice up the cabbage, toss with grated carrots, raisins and toasted almonds. drizzle oil seasoned with cinnamon and vanilla over mixture. devide avocado quarter into three, place on tortilla chips and place on top of the salad
