ZUCHINNI BOATS (175 cal)
one zuchinni
1/4 cup sticky rice
2 tbsp salsa
1 cm slice cheddar
boil one zuchini until almost tender. cut in half, scoop out insides.
mix rice and salsa and scooped out zuchinni. fry in non stick pan.
place rice mixture in zuchinni boats, top with slice cheese and a few chives, maybe oregeno.
brown under broiler.
beat eggs, mix with frozen veggies.
pour into non stick loaf pan, top with cheese, herbs and bread crumbs.
cook 45 min or so, around 350 degrees
(double it for leftovers the next day)
