Dumplings, Taco Salad

Taco Salad (388 calories)
1 cup lettuce
1 tomato
1 veggie "meatball"
2 TBSP salsa
6 tortilla chips
2 TBSP light sour cream
1 cm slice part skim mozza cheese
crunch up the chips, layer on heated up crumbled up vegetarian meatball, grated cheese, lettuce, tomato pieces.
toss with salsa and sour cream. 

Dumplings (235 calories)
3 TBSP filling
3 dumpling wrappers
2 tsp oil for frying

place a TBSP of filling on each dumpling. moisten the edges and fold together. steam. fry in small amount of oil if you'd like them to be browned. Serve on sliced cabbage with carrot slivers for garnish.

Filling Recipe
I baked this as 3 loaves, but the texture is better for filling savoury crepes,
 wonton wrappers or rice paper.

200 cal 1/2 pkg firm tofu
50 cal 1 cup mushrooms
10 cal 2 cloves garlic
20 cal 1/4 onion
200 cal 1 cup sweet potato
20 cal 1/4 cup veg stock
200 cal 1 cup sticky rice

8 cal 1 cup lettuce
26 cal 1 tomato
20 cal 1 veggie "meatball"
20 cal 2 TBSP light sour cream
15 cal  2 TBSP salsa
80 cal 6 tortilla chips
90 cal 1 cm slice part skim mozza cheese

Dumplings
115 cal 3 TBSP filling
80 calories 3 wonton wrappers
40 cal 2 tsp oil
20 cal 1 cup cabbage
